Instant Pot Pressure Cooker Burn — What It Means & How to Fix It

Also shown as BRN on some models.

The Instant Pot Burn message (which Instant Pot calls the food BRN error) means the pot is overheating at the bottom, usually because there is too little thin liquid.

What this code means

Instant Pot's FAQ gives three reasons for a food BRN error: not enough liquid in the inner pot, a steam release handle or valve that is not seated properly or is set to venting, and food left stuck to the pot after sautéing. Each one lets the base of the inner pot get hotter than it should.

Based on the "Why am I experiencing a food BRN Error?" answer in Instant Pot's FAQ. Depending on the model the display may word the warning slightly differently, so check your manual for the exact message.

Most likely causes

CauseHow likelyDIY-fixable?
Not enough thin, water-based liquid in the inner pot Very common Yes — add liquid
Browned bits left on the pot bottom after sautéing Common Yes — deglaze
Steam release set to venting or not seated Common Yes — no tools

What you can try yourself

  1. Cancel the program and release the pressure safely, following your manual.
  2. Open the lid, stir, and scrape up anything stuck to the bottom of the inner pot.
  3. Add thin, water-based liquid to meet the minimum for your size: 1 cup for 3 Qt, 1½ cups for 6 Qt, 2 cups for 8 Qt, 2½ cups for 10 Qt. Thick sauces need an extra cup of thin liquid.
  4. Set the steam release to sealing and push it down fully onto the steam post.
  5. Restart the program.

Frequently asked questions

Instant Pot's minimums are 1 cup for a 3 Qt, 1½ cups for a 6 Qt, 2 cups for an 8 Qt and 2½ cups for a 10 Qt, with an extra cup of thin liquid when the sauce is thick.

Why do I get Burn after using Sauté?

Bits of food stick to the pot bottom while browning. Instant Pot says to deglaze the inner pot after sautéing so nothing is left to scorch.
